Thanksgiving Day fun!

We traveled this Thanksgiving and had a blast. My husbands Aunt and Uncle live about five hours from us and invited us to spend a few days with them and we quickly took them up on the offer. We don't see them very often and always enjoy our time with them. They are great people and we are so blessed to know them and have them as family. These are just a few pics from Thanksgiving day and I will be on soon to share more from our trip.

Just relaxing at Tom's daughter's house. She was so sweet to have all of us and we really enjoyed spending time with her and her husband too.

This is a long story, but the short version is while Robyn (Tom's daughter on the left) was getting something out of the fridge I noticed right over her head this cake was fixing to fall out of the freezer. The top layer had already slid off the bottom layer but we both caught them and it was salvaged! Oh my what a memory!

This little gal had so much fun chasing and being chased by Robyn's big black lab. She didn't seem to care that there were no kids her age there as long as she could play with the dog. Well more soon and it's beginning to look a lot like Christmas too around here so come back soon.

Best chili ever!!!

Alright all you girls out there in need of a new recipe for these chilly (chili) months, this one is for you! :) This is some of the yummiest (is that a word?) chili you will ever taste so please do try it. The recipe is as follows with fun pictures to go along. I usually double this recipe because you will want leftovers.
Vegetarian or Sweet Potato Chili:
2-3 tbsp olive oil
2 1/2 tsp chili powder
3/4 tsp ground corriander
3/4 cumin
3/4 cinnamon
1 tsp salt
1 med onion diced
2 tbsp soy sauce
2 cloves garlic minced
28 ounce can crushed tomatos
1 chopped sweet potato
1 cup cooked or frozen corn
2 cans kidney beans (drained and rinsed)
2-3 cups of water
2 cups cooked rice

Start off with a big soup pot and drizzle in your olive oil and sprinkle in seasonings.

Let that come to a simmer. Now the house will be smelling sooooo good.

Once seasonings have simmered for a minute or two add onion and garlic.

Cook onions until they are softened.

After that add your tomatos and soy sauce.

Then go ahead and dump in your beans and corn.

Make sure you drain and rinse your beans.

Now it's lookin' yummy!

Bring to a simmer and add chopped sweet potato. At this point you can add a few cups of water depending on how thick you like your chili.

Bring this beautiful pot of goodness to a simmer and let cook about an hour or until the sweet potato is tender.

Isn't that lovely!

While the chili is cooking I go ahead and cook up some rice. You can serve the chili on top of it or just dump it in the chili at the end.

Oh and what is chili without some cornbread. I am sure everyone has their favorite and some of you even make yours from scratch ( you go girl! ) Jiffy helped me out with mine.

Oh and I had a little snack while waiting and breathing in that glorious aroma!

Sometimes, and if you have a man in the house that likes his meat, I will brown up some sausage and throw it in at the end.

OOoooooh cornbread is done! Where did that missing one go?

Oh I guess my little helper needed a snack too. :)

Now sit back and enjoy. You won't be sorry you did.

Niece Week!

I had to share these pictures of my precious little niece on her birthday. We had a wonderful time celebrating this adorable little girls birthday with her and our family. I had fun, well I did get a little stressed out, making her little apron to go with her pots that we gave her for her little kitchen at home. I got stressed out because I thought I had ruined it when the embroidery was messing up on my machine, but after ripping it all out and doing it over it turned out nicely. And tomorrow we get the joy of celebrating another one of my adorable nieces birthdays. I am an auntie with some adorable nieces!! You wouldn't say I'm biased would you? :)

A camping story part 3...

So here is the end of the camping posts. Hope you enjoy it.

This is such a cute and quaint little market with so much character.

After roaming the market it was on to the furniture store that I love going in for ideas.

After heading back on our bikes to the campground we were ready to relax and take a nap.

After a snack of course with our tasty strawberry peach jelly we bought at the farmers market.

And we thought we'd finish our game of Scrabble we started the night before.

How sweet is this. I only noticed later that we had the words "in love" on the board.

Later on after getting ready to go we headed out for dinner.

It was pretty chilly this night. But I loved it! Especially after we got back to our campsite and did this!

The next morning was beautiful. We enjoyed a great breakfast of nice hot grits and fruit. I had the cereal out in case we wanted some.

After eating, cleaning up and packing the car we decided to enjoy one more bikeride over to the beach. Aren't these dunes pretty?!

Well this is the end of our trip. We threw the bikes on the rack and after a quick stop at Starbucks we had a lovely drive home going through a few other beach towns.

This little town reminds me of the little villages in Germany. I really am so blessed that we could have this little time away. And I told my hubby I would love to plan a trip just like this to the same place every year.
